Romano's Macaroni Grill Bellini Recipe
This frozen drink is very flexible and can be served plain (as in the photo above) or swirled with blueberry or raspberry-infused vodka. Macaroni Grill makes Bellinis in an old-fashioned frozen drink machine. If you have one of those, cool! But you can use a blender and crushed ice.
Ingredients
- 1 ounce Peach Schnapps (2 tablespoons)
- 1 ounce Rum (2 tablespoons)
- 6 ounces White Wine; (3/4 cup)
- 6 ounces Champagne; (3/4 cup)
- 8 ounces Peach Nectar or Peach Juice (1 cup) (See Note 1 Below)
- 2 teaspoon Powdered Sugar
- 2 cups Crushed Ice
- Optional 2 ounces Blueberry or Raspberry-infused Vodka (4 tablespoons) (See Note 2 Below)
Directions
- Place the schnapps, rum, white wine, 3/4 cup water, champagne, peach nectar and powdered sugar in a heavy duty blender and pulse to mix.
- Add 2 cups of crushed ice and process until ice is finely ground (do not add more ice - the mixture will be more liquid than frozen at this point).
- Pour into shallow plastic or stainless steel container.
- Place in the freezer for 2 to 3 hours, stirring once every hour.
Optional - Serve with optional infused vodka swirled in.
Note 1 - Select a pure peach juice, not a blend.
Note 2 - To infuse vodka: Pour 1/2 cup vodka over 1/4 cup frozen blueberries or raspberries, let rest at room temperature 2 to 3 hours, then drain vodka and use. Discard fruit or eat it if you want.
